2/3 cup butter
2/3 cup flour
1/2 tsp pepper
3/4 tsp salt
6 cups milk
4 large baked potatoes, peeled and cooled
2 Tbsp green onion, diced
1/2 cup bacon, cooked and crumbled
1 cup shredded cheddar cheese
1-8 ounce carton sour cream

In large kettle combine butter, flour, salt and pepper. Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add cut up baked potatoes to hot mixture. Add green onion, bacon and shredded cheese. Let simmer until heated through. Add sour cream and stir thoroughly. Add extra milk if soup is too thick. Serve soup with sprinkles of green onion, bacon and shredded cheese on top of soup.
