Put eggs in cold water and bring water and salt to a boil with lid on. Once water starts boiling, turn off heat and let cook for 12 minutes. Run cold water over eggs and crack shell off.

This is Des' recipe exactly as she wrote it. Start peeling the eggs as they sit in the cold water and they are cool enough to touch (but are still warm/hot). Firmly press the shell against the side of the sink all the way around the egg, and on both ends. Starting in the middle of the egg, peel shell, working to find the membrane of the egg (to make the egg look pretty.) We have hard boiled fresh eggs (laid the very same day we boiled them), and this process works.
