1 lb. fish fillets (any firm, white fish will do, like cod, halibut, or tilapia)
1/2 c. flour
1/2 tsp. salt
1/2 tsp. black pepper
2 eggs
2 1/2 c. oats
1/2 c. oil

Directions:
Directions:
Rinse fish; pat dry. Put the flour in a ziploc bag with the salt and pepper; add fish pieces and shake until coated. Put the oil in a large frying pan and heat on medium heat. When the oil is hot, dip each piece of flour-coated fish in the eggs, then in the oats, then place in the pan. Cook about 5 minutes; turn over, and cook an additional 5 minutes. Drain on paper towels, and serve with lemon juice or malt vinegar.
