3 cups leftover turkey, cut into bite-size pieces
2 Tbsp flour
2 Tbsp Dijon mustard
2 Tbsp white wine
1 cup half & half or milk
1 Tbsp olive oil
2 cloves garlic, minced
1 medium red bell pepper, jullienne'
1 medium onion, chopped
1-1/2 cups fresh mushrooms, sliced
3/4 cup frozen peas, thawed
8 ounces Light & Fluffy noodles, cooked

Directions:
Directions:
In a small bowl stir together the flour, mustard, and wine, until smooth. Stir in the half & half or milk until well mixed. Set aside.
Heat the oil in a large skillet cook the red pepper, onion and garlic until the onion softens. Add the mushrooms and cook for another 2 to 3 minutes.
Add the sauce and the turkey. Cook, stirring until the sauce is thick and bubbly. Add the peas, and cook for 2 minutes, to heat through. Serve over hot cooked noodles.
