For Bhature
2cups all purpose flour
2tablespoon yeast
1cup yogurt
2tablespoon oil
2pinch salt

For Chole
4cups garbanzo beans
1/2 tablespoon ginger
1/2 tablespoon garlic
2medium size onion - diced
1ablespoon cumin seeds
2tablespoon cilantro
1/2 tablespoon turmeric
1/2 tablespoon chilly powder
2-3 cloves and black cardmom
1/2 tablespoon garam masala
salt to taste
2tablespoon oil
2cup water

take yeast and soak in lukewarm water for 5-1o minutes.

take all other ingredients and mix well. To this add the yeast ans make a soft dough like for chappatis. If needed, add a little water and keep aside for 4-5 hours, the longer your kept, the better it is.

Roll like puri but this need to be kept thicker than puri. Fry like poori till both sides are golden brown.

For Chole:-
Boil the chole (garbenzo beans) in pressure cooker. Add a little salt in the water. Boil till soft but not mashed.

take 2 tablespoon of oil in a pan and heat it.

add diced onion. Fry till it become brown.

add diced tomatoes and fry till it becomes a curry puree.

Add garlic powder and make it dark brown. Then add cumin seeds and fry till they start spluttering.

Now add black cardamom and cloves.

Now add the rest of ingredients including water except the cilantro.

Cover the pan and wait for 10-15 minutes till a thick curry form.

Add chole( garbenzo beans) to the curry and stir well for 5-7 minutes.

For Garnishing:-
Garnish Choley with thinly sliced long pieces of onion and a piece of lemon split up into 4 pieces and split green chillies.

Make a salad of fresh cucumber, tomatoes and reddish and serve with the dish.
