Nauna Serena’s Veggie Patties ( Given to her by her sister Tessie)

Ingredients
1/3 cup of cauliflower
½ cup of carrots
1/3 cup of broccoli
¼ cup of spinach

Cook 20 minutes till soft – drain and let sit

2 tsp of diced celery
3 large regular potatoes
I large Yam
Peel, dice
Cook till soft and drain

2 teaspoons of chopped onions
1 chopped clove of garlic
Brown in frying pan with olive oil – you will mix with the
Vegetable batter

4 eggs
I cup of flour
1 ½ cup of milk
½ teaspoon of salt, parsley, oregano

¼ cup of Italian Bread Crumbs
½ teaspoon of Italian seasonings
2 tablespoons of olive oil

In a very large bowls mash yams and potatoes with 1 tablespoon of butter and eggs and milk – mix in cooked onion and garlic
Slowly add ½ of your other vegetables ( Carrots, broccoli etc.) and ½ dry ingredients ( salt, pepper parsley and oregano) Then add the rest of the vegetables and dry ingredients mix in cup of flour – you should have cookie dough consistency. Using a big spoon make silver dollar size pancakes.
Heat oil in a large frying pan – cook to desired crispness
Delicious and Healthy and can be frozen between piece of wax paper --- Enjoy!!!
