12 oz penne pasta
1/4 cup olive oil
2 tbsp butter
2 shallots, chopped
6 garlic cloves, minced
3/4 lb shrimp
3 roma tomatoes
1/4 tsp salt
1/4 tsp pepper
1/2 cup (2 oz) feta cheese
2 tbsp parsley

Directions:
Directions:
Cook penne pasta, drain
Heat oil and butter in skillet over medium heat until butter is melted.
Add shallots: cook 3-4 minutes
Add garlic: cook 1 minute
Add shrimp: cook 3-4 minutes
Stir in tomatoes: cook 5 minutes
Stir in salt and pepper
Top penne with shrimp mixture
Sprinkle with cheese and parsley
