4 - 15 oz cans of sliced new potatoes, drained
1 small jar of green chiles
1 small red bell pepper, finely chopped
1 small onion, finely chopped
Seasonings as desired (recommended):
Salt and Pepper

1/4 cup vegetable oil (such as Canola Oil)

Directions:
Directions:
Chop all ingredients as noted above and drain potatoes.

In large non-stick skillet, add oil & allow to pre-heat about a minute.

Add onions and allow to soften. Add all the rest of the items to skillet at once.

Cook approximately 7 minutes per side, for a total of 14 minutes or until well browned.
