1 1/2 cup all purpose flour blend (gluten free)
1/4 tsp salt
1 tsp vanilla
3/4 cup milk (dairy, nut, rice or soy)
1/4 cup oil
2 eggs
1 1/2 tsp baking powder
1/2 cup sugar

Directions:
Preheat oven to 375º. Mix all ingredients thoroughly. Grease or paper line 8 - 10 muffins cups. Fill 3/4 full. Bake 15 -20 minutes until golden.
