1 cup all purpose flour blend (gluten free)
2 tsp baking powder
1 egg
3/4 cup + 2 tbsp milk (dairy, nut, rice or soy)
1/4 tsp salt
2 tsp sugar
2 tbsp oil

Directions:

Mix all ingredients thoroughly. Heat griddle on medium high and coat with oil. Pour batter (about 6 tbsp per pancake) onto hot griddle. Turn pancakes when bubbles begin to form on surface.

For waffles increase liquid to 1 cup, increase eggs to 2 and add an extra 1 tbsp of oil. Pour about 6 tbsp of batter onto hot oiled waffle iron. Remove when brown on both side.
