1/4 cup red chile
2 3/4 cups of liquid (water & beef broth combined, (I like Knorrs))
Oregano to taste (fresh)
3 Tbls. Olive oil, or veg. oil
4 Tbls. Flour
2 cloves garlic, minced

Directions:
Directions:
Mix red chile, liquid and seasonings in the blender. Let sit.
Heat oil in skillet and add garlic, saute, then add the flour to make a paste.
Add red chile mixture, stirring constantly (chile burns easily)
Bring to a boil, then simmer for 30 minutes. Keep tasting for seasoning.
Use over enchiladas, burros — Yum!
Or, slow cook pork loin in the sauce. Yum! Yum!

Green Chile
Same as above except:
Use 1/8 ground, 1/8 minced green chile (maybe a bit more ground than minced)
Dice and sauté an onion with garlic
Slow-cook or pressure-cook beef, pork or chicken to add to sauce. Mix into sauce. Roll it up and enjoy!

* You can use chicken broth or vegetable broth rather than beef broth for either of these
