1/3 c. shortening
1/2 c. sugar
2 eggs
1 3/4 c. flour, sifted
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 c. ripe banana, mashed

Directions:
Directions:
1. Cream together shortening and sugar.
2. Add eggs to creamed mixture and beat well.
3. Sift together dry ingredients.
4. Add dry ingredients to creamed mixture, alternately with banana, blending well after each addition.
5. Pour into a well-greased 9 1/2x5x3" loaf pan.
6. Bake at 350 for 40-45 minutes or until bread tests done.
7. Remove bread from pan and cool on a cooling rack.
