1 1/2 lb beef terderloin or boneless top loin, cut in 1/2 inch thick slices (beef is easier to cut if partially frozen)

2 tbsp. butter
1 1/2 cups beef broth
2 tabsp. catsup
1 clove minced garlic
1 tsp. salt
8 oz mushrooms
1 medium onion, chopped
3 tbsp. flour
1 Cup sour cream or plain yogurt
1 tbsp. butter

Directions:

Cook and stir beef in 2 tbsp butter in 10-inch skillet over low heat until brown. Reserve 1/3 cup beef broth. Stir remaining broth, the catsup, garlic and salt into the skillet. Heat to boiling; reduce heat. Cover and simmer until beef is tender, 15 minutes.

Stir in mushrooms and onion. Cover and simmer until onion is tender, about 5 minutes. shake reserved broth and the flour in a tightly covered container; stir gradually into beef mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute, reduce heat. Stir in sour cream or yogurt; heat through. Serve over rice or egg noodles.
