1/3 cup olive oil
5 tsp minced garlic
2 lbs uncooked large shrimp
2 cups artichoke hearts, chopped and drained
2 cups crumbled feta cheese
1 can diced tomatoes undrained
4 tbs lemon juice
3 tbs chopped fresh parsley
pasta of your choice

Heat oil in large skillet over medium heat. Add garlic and saute 30 seconds. Add shrimp (half at a time) and saute until almost cooked through, about 2 more minutes. Add artichokes, feta, tomatoes, lemon juice and parsley and saute until shrimp is cooked through. Cook pasta and combine with shrimp. If you feel it needs a little more liquid, add about 1/2 cup of pasta water. Toss all together and enjoy!
