2 cups uncooked rice
1 tsp. salt, divided
½ tsp. ground red pepper (cayenne)
½ tsp. chili powder
¼ tsp ground cumin
¼ TSR black pepper

1 ½ lbs peeled and deveined uncooked shrimp
3 tbsp. olive oil, divided
2 TSR. minced garlic
1/3 cup tequila
3 tbsp minced fresh cilantro, divided
2 tbsp fresh lime juice
Lime wedges (optional)

Directions:
1. Cook rice according to rice cooker directions.

2. While rice cooks, combine ½ tsp salt and next 4 ingredients (1/2 tsp salt through black pepper) in a large zip-top plastic bag. Add shrimp. Seal and shake to coat.

3. Combine ½ tsp. salt, 2 tbsp. oil, 2 tbsp cilantro and 2 tbsp lime juice in small bowl. When rice is finished cooking, pour mixture over rice and toss to coat.

4. Heat 1 tbsp. oil in a large skillet over medium-high heat. Add shrimp and cook 3 minutes, turning once. Add garlic, sauté 1 minute. Add tequila and 1 tbsp cilantro, cook 1 minute.

Serve shrimp over rice mixture with lime wedges, if desired.
