15 - 20 lb turkey
1 C chicken stock
butter
1 clove garlic, minced
1 tsp dried basil
1 tsp salt
1/2 tsp ground pepper
1/4 tsp dried rosemary
1/4 tsp dried marjoram
3/4 C butter, room temperature
1 1/2 C dry white wine

Directions:
Directions:
Rinse turkey under cold running water and pat dry with paper towels.

Preheat oven to 325º.

Pour 1/2 C stock in roasting pan.
Heavily butter roasting rack and set in pan.

Combine herbs and rub some butter over turkey.
Sprinkle evenly with herb mixture.
Place turkey breast side down on rack and roast 20 minutes.

Melt remaining butter in small saucepan over medium heat.
Remove from heat and add wine.

After 20 minutes, baste turkey generously with butter wine mixture and continue roasting according to wrapper directions.
Baste with wine mixture and pan juices every 30 minutes or so, checking occasionally to make sure breast skin is not sticking to roasting rack.

During last hour of cooking, turn turkey breast side up and finish roasting.
