3 T butter
2 jumbo onions, thinly sliced
1/2 tsp salt
1/2 tsp pepper
4 large potatoes, peeled and thinly sliced
1 cup fresh grated Parmesan cheese (dried Parmesan will NOT work)
1/4 tsp paprika

Directions:
Directions:
Preheat oven to 350º.
Butter 2 quart casserole dish.
In a medium skillet melt butter.
Add onions and cook over medium heat for 10-15 minutes until onions become carmelized (light brown).
Stir in salt and pepper.
Arrange 1/3 of the potato slices in the casserole dish.
Top with 1/3 of the onions and 1/3 of the Parmesan cheese.
Repeat layers two more times.
Sprinkle paprika on top.
Bake 60-70 minutes or until potatoes are tender and crusty on top.
