1 c oatmeal,
1 c skim milk,
1/2 c margarine,
1 egg (slightly beaten),
1/4 c brown sugar,
1/2 c raisins,
1 c whole wheat flour,
1 1/2 tsp baking soda,
1 1/2 tsp baking powder.

Directions:
Directions:
In large bowl, soak oatmeal in milk for an hour. Add melted margarine, egg, brown sugar, and raisins. Mix well. In medium bowl, mix dry ingredients. Add to the oatmeal mixture. Stir just enough to moisten the flour. Batter should be lumpy- do not over mix. Use muffin tin liners or spray muffin tins with cooking spray. Fill each cup 2/3 full. Bake at 400 for 15-20 minutes or until done.
