1 c. flour
1 c. brown sugar
1 c. oatmeal
1/2 c. margarine or butter

4 c. chopped rhubarb

1 c. sugar
1 c. water
2 T. cornstarch
1 tsp. vanilla
Red food coloring

Mix flour, sugar, oatmeal and butter as a pie crust. Press half in 9" cake pan. Cover with rhubarb.
Combine sugar, water, cornstarch, and vanilla in saucepan. Cook until thick and clear. Add a few drops of food coloring if desired. Pour over rhubarb - add rest of crust on top.
Bake at 350 for 45 minutes.
