1 onion
1 tsp salt
Fresh parsley
2 cups diced raw potatoes
Flour

Directions:
Directions:
Combine in blender 2 eggs, 1 slice of onion, 1 tsp. salt, a few sprigs of parsley, 1 cup diced raw potatoes. Turn blender on high, remove cover, and add 1/4 cup flour and a second cup of diced potatoes. Do not overblend. Pour onto a hot greased griddle and cook until brown on both sides. This makes a soft pancake, more like a griddlecake.

Grandma used to make this on Fridays when we where not supposed to eat meat. It was my favorite and I loved to cover it in apple butter. Yum!
