3 packages (6oz) grilled chicken breast strips (like Perdue, Tyson or Foster Farms)
1/2 c. chopped fresh cilantro
1/2 medium red onion, diced
1/4 c. chopped fresh mint
1/2 c. chili sauce
2 tsp. shredded lime zest
1/4 c. lime juice
1 T. soy sauce
1 1/2 tsp. Thai seasoning, spice island
1 tsp. minced garlic
1/4 c. julienne carrots (packaged type is fine)
1 head Boston or Bibb lettuce, separated into leaves.
1/2 c. chopped peanuts for topping

Directions:
Directions:
In food processor combine chicken strips, cilantro, red onion and mint. Pulse until coarsely. Be careful not to over process or mixture will be pasty. Transfer to bowl and stir in chili sauce, lime zest, lime juice, soy sauce, Thai seasoning, garlic and carrots.
Serve with lettuce for wraps and chopped peanuts for topping.

I was unable to find the Thai spice so I used a package of "A taste of THAI peanut sauce mix". I used 2 tsp. from mix and mixed up the remainder of mix according to the package direction and used as a topping sauce on wraps. I also used Maggi Sweet Chili Sauce as a topping. The Sweet Chili Sauce can also be added directly into mixture with regular Chili Sauce.
