2 c. frozen hash browns
1 c. chopped fully cooked ham, bacon or sausage
1/2 c. chopped onion
2 T. cooking oil
6 eggs
1 c. (4 ounces) shredded cheddar cheese
Salt and pepper to taste
Minced fresh chives

Directions:
Directions:
In a large skillet, saute potatoes, meat and onion in oil for 10 minutes or until potatoes are tender. In a small bowl, beat eggs, salt and pepper. Add to the skillet; cook, stirring occasionally until eggs are set. Remove from the heat and gently stir in cheese. Spoon onto service platter; sprinkle with chives.
