2 jars (6 oz. ea.) marinated artichoke hearts
4 eggs
1/2 tsp. salt
1/8 tsp. oregano
1/8 tsp. Tabasco Sauce
Parsley
1 large onion, finely chopped
1 clove garlic, minced
1/4 c. fine dry seasoned bread crumbs
1/8 tsp. pepper
1/2 lb. sharp cheddar cheese, grated

Directions:
Directions:
Drain marinade from 1 jar artichokes into a skillet. (Drain other jar of artichokes, discarding marinade.) Chop artichokes and set aside. Saute onion and garlic in marinade until onion is limp, about 5 minutes. Beat eggs until fluffy, then add bread crumbs, salt, pepper, oregano and Tabasco Sauce. Stir in cheese, parsley, artichokes and onion mixture. Mix well and pour into a greased 11 x 7 in. baking pan. Bake in a preheated 325º oven 30 mins. Let cool in pan and cut into 1 inch squares. Serve warm or cold. These can be frozen and reheated in oven for 10-12 mins.
