Zucchini Pie Recipe

1 c. sugar
1/4 c. brown sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1 T. lemon juice
1/4 tsp. allspice
1 1/4 tsp. cram of tartar
pinch salt
3 T. cornstarch
2 T. butter

Directions:
Directions:
Peel and slice into 1/4" pieces 5 cups of zucchini. ( you can use large ones but scoop out the seeds, then the pieces look more like apples) Cover with water and boil 5 minutes. Drain well and mix in remaining ingredients. Bake in 9" double crust pie shell at 400º for 10 minutes. Reduce heat to 350º and cook for 20 minutes.

Grandma Whitehead loved to make this for people. Everyone was always so surprised that it was zucchini and not apple. She made it for Corey to share in 3rd grade for "Zucchini Day". It was a hit.
