1/2 c vegetable oil
3/4 c white sugar
2 eggs
1 tsp. baking powder
1/4 tsp. salt
1 T vanilla pudding (dry)
1 c gluten free flour with Xanthium Gum
(or add 1 tsp Xanthium Gum)
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c milk
1 1/2 c carrots (shredded)
1/2 c chopped walnuts or pecans
1/2 c raisins

Directions:

Combine oil, sugar, eggs and vanilla. Add dry ingredients. Gradually add the milk then carrots, nuts and raisins.
Grease 8X8 Pan
Bake 350º
25 - 30 minutes
