4 T. butter (melted)
1/4 c. white sugar
1 c. buttermilk (or milk)
2 eggs
1 1/2 c. corn meal
1/2 c. gluten free flour with Xanthium gum in mix
( or add 1/2 tsp. of Xanthium gum)
2 T. baking powder
1 tsp. salt
1 tsp. baking soda

Directions:

Combine melted butter and sugar. Add gluten free flour, eggs and milk. Stir in all other ingredients.

Pour into a greased 8x8 pan. Bake 450º for 25-39 minutes.
