1 pound ground chuck
1 (6 ounce) pkg pepperoni, finely chopped
1 cup finely chopped onions
1 cup chopped fresh mushrooms
1 cup panko
1 teaspoon dried basil
2 large eggs, lightly beaten
2 (24 ounce) jars pasta sauce
5 unsliced sub rolls
2 (8 ounce) packages shredded mozzarella cheese

Preheat oven to 350º. Line a baking sheet with heavy duty foil and spray with cooking spray.
Combine ground chuck, pepperoni, onion, mushrooms, breadcrumbs, and basil. Add beaten eggs and mix well. Shape into 2" meatballs and bake until no longer pink (about 28-30 minutes).
In large pan combine meatballs and pasta sauce. Cook for 10 minutes or until sauce is hot.
Preheat broiler.
Hollow out centers of each sub roll. Place rolls on baking sheet and sprinkle 1/2 cup cheese into hollowed out portion of roll. Top each with 3 meatball's and desired sauce. Sprinkle each with remaining cheese. Broil for 1 to 2 minutes or until cheese is melted.
