Boneless chicken breast
Italian bread, sliced
Homemade or Jar of Roasted Red Peppers
Mozzarella Cheese
Homemade or Jar Spaghetti Sauce

Directions:
Directions:
Cook chicken breast in oven or on grill until done, but do not overcook. Remove from heat. On broiler pan, layer the following:
Large Slice of Italian Bread, 1 chicken breast, roasted red pepper, and mozzarella cheese. Broil until cheese is bubbly and beginning to brown. Place on individual plate and top with spaghetti sauce.

I made this recipe up one day and everyone loved it. It is very filling and quick. Make sure some of the edges of the bread stick out to brown.
