1 bag coleslaw mix (containing cabbage and carrots),
1/3 c chopped cilantro,
1/3 c rice vinegar,
3 tbsp olive oil,
pinch of salt.

Directions:
Directions:
Whisk cilantro, vinegar, oil, and salt in a large bowl. Add cabbage and carrots. Toss well. Cover and refrigerate several hours. Toss again just before serving.
