1 (1 Ib) pkg frozen fish fillets (thawed, don't separate),
2 medium sliced zucchini,
1 (14 1/2oz) can stewed tomatoes (drained),
1/4 c sun-dried tomato vinaigrette dressing (See personal notes),
1/2 c crumbled Feta cheese,
1 lemon (cut into 4 wedges)

Directions:
Preheat oven to 400º. Cut packaged fish into 4 equal parts. Mix zucchini and tomatoes in a 9'' baking dish. Top with fish. Spoon one tbsp dressing onto each portion of fish. Bake 15 minutes. Sprinkle with cheese. Bake additional 8-12 minutes or until fish flakes easily with a fork. Serve with lemon wedges.

If you don't have sun-dried tomato dressing, you can substitute with combination of sweet vinegar, olive oil, and basil.
