MARINADE:
4 6-ounce salmon filets
1/4 cup pineapple juice
2 T. lemon juice

RUB:
2 T. brown sugar
4 tsp. chili powder
1 tsp. grated lemon rind
3/4 tsp. cumin
1/2 tsp. salt
1/4 tsp. cinnamon
1 cup bread crumbs

Directions:
Directions:
Put filets in large zip lock back adding initial ingredients. Marinate in refrigerator for one hour.

Preheat oven to 400. Mix the rest of the ingredients with bread crumbs. Discard marinade and rub fish in bread crumb mixture.

Place filets in light oiled 11x10 baking dish. Bake at 400º for 15 minutes until flakey.
