Ingredients:

1 pkg Lime jello ( 6 oz box is best if you can find it)
1 cup hot water
Grind together:
2 large carrots
2 sticks celery
1 med. onion
Mix together:
1/2 carton cottage cheese
1 cup whipped cream
3/4 cup mayonnaise
1/4 tsp salt

Directions:
Directions:
Mix first two ingredients together and then cool syrup. Add the rest of the ingredients and place all in a ring mold and chill overnight. To serve unmold salad to a fancy crystal plate and serve with a small bowl of mayo in the center of the salad.

This is one of my favorite salads that Mother made. I seldom make it because most of my family does not eat jello salads, but I sure enjoy it when someone makes this salad. Submitted by: Evie
