1 Ib flank steak,
2 sliced green bell peppers,
1 med yellow onion (sliced into 1/2 circles),
1 (14.5oz) can organic/no salt added diced tomatoes,
1 whole wheat baguette or crunchy bread (cut into four servings for sandwiches).

Coat a large skillet with cooking spray and heat on medium heat. Place bell peppers in skillet and cook for about five minutes, stirring often. Add onions. Cook about five more minutes until vegetables are tender and lightly browned. Add tomatoes. Bring to simmer and let thicken. Season to taste with salt and pepper,and remove from heat.

Meanwhile, coat another skillet with cooking spray and heat to medium heat. Season steak on both sides with salt and pepper. Place in skillet and cook until browned. (About five minutes on each side for medium rare) Remove from skillet and let rest 5-10 minutes on cutting board. Thinly slice against the grain.

Place steak on baguette. Top with vegetable mixture and serve.
