4 c. freezer corn
2 tbsp. butter
1 medium onion (1 in. diameter)
16 crushed soda crackers
2 c. evaporated milk
4 eggs
salt and pepper

Directions:

Mix all ingredients together and pour into a casserole dish. Bake at 350º for 1 hour.

Each Christmas and birthday party would not be the same without this recipe as part of the menu. It is a family favorite and will be for many years to come. Eileen was a wonderful cook and her memory will live on in the recipes she left for us to enjoy.
