8 small red potatoes,
2 finely chopped green onions,
1/3 c reduced fat sour cream,
1/3 c skim milk,
2 slices cooked/crumbled bacon,
1/2 c shredded reduced-fat sharp cheddar cheese,
1/8 tsp garlic powder,
1/2 tsp salt,
1/8 tsp pepper.

Directions:
Directions:
Preheat oven to 350º. Wash and pierce potatoes with a fork. Place on paper towel in microwave and cook on high for 6 minutes or until tender. Let stand 5 minutes. Cut each potato in half and scoop out the cooked potato, saving the potato skin shell. Mix cooked potato, onion, and remaining ingredients with an electric mixer. Spoon mixture into shells and place on baking sheet. Bake for ten minutes or until hot.
