6 tbsp Smart Balance margarine,
1 tbsp finely chopped onion,
1/2 c flour,
2 1/2 c fat free chicken broth,
2 c cooked wild rice,
2 c cooked/chopped chicken breast,
1 (12oz) can skimmed evaporated milk,
1/2 c finely grated carrots,
3 tbsp chopped/slivered almonds.

Directions:
Directions:
Melt margarine and saute onion until tender. Add flour to make a paste. Slowly add broth. Cook until mixture boils one minute, stirring constantly with a wire whisk. Stir in rice, chicken, carrots, and almonds. Simmer five minutes. Add milk and heat to serving temp.
