2 tbsp olive oil,
1 lg onion (chopped),
4 cloves garlic (minced),
4 half chicken breasts (cooked and chopped),
3 (14 1/2 oz) cans chicken broth,
2 (4oz) cans green chili peppers (chopped),
1 tsp cumin,
1 tsp oregano,
3/4 tsp cayenne pepper,
5 (14.5oz) cans great northern beans (do not drain),
1 c shredded Monterey Jack cheese.

Directions:
Directions:
Saute onion and garlic in oil in large soup pot over medium heat for ten minutes or until onions are tender. Add chicken, broth, peppers, cumin, oregano, and cayenne pepper. Bring to boil. Reduce heat to low and add beans. Simmer for 20-30 minutes or until heated through. Pour into individual bowls and top with a sprinkle of shredded cheese.
