Tortellini (2 pkgs. refrigerated cheese-filled tortellini)
cooked, 10 oz. package frozen, tiny green peas
1-2 chopped parsley
freshly grated Parmesan (1/2-1 cup)

Vinaigrette Dressing:
4 tsp. red wine vinegar
1 1/2 tsp. Dijon mustard
1/2 tsp. salt
3 cloves garlic, crushed
8 tsp. olive oil

Directions:
Directions:
Cook tortellini; drain. Also, cook peas. Whisk vinaigrette dressing ingredients together to form an emulsion. Pour dressing over pasta and peas. Add parsley and grated cheese and salt and pepper to taste. This is good served room temperature or chilled.
