1 1/2 C white flour (King Arthur)
1/2 C whole wheat flour
1/4 t baking soda
1 1/2 t baking powder
1 T sugar
1/2 t salt

2 egg yokes
2 C buttermilk slightly warmed
1/4 C milk
6 T butter melted

2 egg whites, beaten until stiff

Plug in waffle iron. Combine dry ingredients, sift into a bowl through a colander.

Beat wet ingredients in a non-reactive bowl.

Combine wet and dry, don't over mix.

Fold beaten egg whites into mix.

Place 1/2 cup batter on each side of waffle iron, cook for 4 minutes exactly.
