Beets from the garden
2 cups vinegar
2 cups sugar
1 cup water
1 tsp. pickling spices

Directions:

Cook beets until tender. Let cool.
Cut any shape you wish.
Put into hot sterile jars.
The above mixture has been cooked and is poured over the beets in the jars, seal each jar.

Pickled beets are a favorite of mine and I used to make them every year, but haven't for about 10 years. They make a big mess around the range and sink, so be prepared for the cleanup routine. Mother always made the best pickles. Submitted by: Evie
