2 c. instant whole grain brown rice,
1 3/4 c. water,
1 small onion,
3 skinless/boneless chicken breast halves,
1 tblsp. oil (canola or sesame),
2 bags (16oz. each) frozen mixed stir fry veggies,
1 jar (10oz) sweet and sour sauce,
1/2 c. slivered almonds or chopped walnuts or cashews (optional).

Cook rice in water as directed. Cut onion into wedges. Cut chicken into strips. Heat oil. Add chicken and onion. Cook until brown. Add frozen stir fry vegetables. Cook 11-13min. until desired tenderness. Will be ready when water from vegetables evaporates. Add sweet and sour sauce. Cook two more minutes or until hot. Serve over rice.
