1 head lettuce

On individual salad plates, arrange a lettuce leaf, top with peach half, fill peach half with cottage cheese. Garnish with paprika.

Shirley made this treat for us on the farm. She learned how to make this salad when she worked at a cafe in Rolette when she was a teenager. She worked with her childhood friend, Janice Thompson.
The cafe was owned by Janice's father.
