3/4 c. margarine
1 1/2 c. flour
1/2 tsp. lemon juice
3 tsp. baking powder
3/4 c. sugar
Frosting:
1 tsp. vanilla
3/4 stick oleo
1 tsp. almond extract
2 1/2 c. powdered sugar
4 egg whites, room temp.
1 tsp. vanilla

Directions:

Cream marg. and lemon juice. Add sugar and cream till light and fluffy. Add extracts. Add egg whites slowly, beat until fluffy. Sift dry ingr. and fold into egg mixture. Grease lamb cake mold GOOD and pour in batter. Put top on lamb mold. Put nose side down on cookie sheet, bake @ 350º for 1 hour and 5 min. Cool 5 min. then carefully remove. Beat frosting, adding milk 1 TB. at a time.

We all remember this cake sitting so happily in the middle of Grandma's table for Easter Sunday coffee. Don't forget to tint coconut green, so the lamb is tucked in grass and surround the lamb with jelly beans too! Aunt Sheryl and Aunt Laurel Ann each have a lamb cake mold, that I am sure they will lend you.
