1-2 sweet potatoes, peeled and sliced thinly
2 Tbs. margarine or butter
1/8 cup water
1 Tbs. oil or cooking spray
1/4 cup granulated sugar

Directions:
Directions:
Peel and slice sweet potatoes thinly. Spray or pour oil in skillet and add sweet potatoes to pan and cook over medium to low medium heat, adding margarine and sugar. Cover and cook for about 10 minutes, then cook uncovered until the sugar and butter carmelizes and thickens (past the syrupy state) ad the potatoes are tender.

Pa Bargo used to make these fried sweet potatoes on a regular basis. I remember them best in the fall. They were a tad crunchy with the sugar and sometimes, just this side of burned, but tender inside. Whenever I make these I remember the times I sat with Pa eating the potatoes.
