"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Adjust your oven recipes for use in your crock-pot.

Directions:
Directions:
* If a recipe cooks in the oven for 15-30 minutes, then you can cook it in your crock-pot on low for 4-6 hours or high for 1 1/2 -2 hours.

* If a recipe cooks in the oven for 35-45 minutes, then you can cook it in your crock-pot on low for 6-10 hours or high for 3-4 hours.

* If a recipe cooks in the oven for 50 minutes-3 hours, then you can cook it in your crock-pot on low for 8-18 hours or high for 4-6 hours.

*Un-cooked meat or vegetable combinations require at least 8 hours on low.

*Open your crock-pot as little as possible, cause every time you peek it takes a LONG time for your crock-pot to get back up to temp.

*If your dish is to watery, open the lid a little and turn on high, some liquid will evaporate.

Personal Notes:
Personal Notes:
I am a big fan of my crock-pot, and I adjust my oven recipes ALL the time, especially in the summer or on Sundays. I however have never cooked anything longer then 12-14 hours, so use the 18 hour comment to you own discretion. :) (BR)
