1 c. shortening
1 tsp. baking soda
1 c. sugar
1/2 tsp. salt
1 c. brown sugar
1/2 tsp. baking powder
2 eggs, beaten
1/2 tsp. vanilla
2 c. coconut
2 cups Wheaties
2 c. flour

Directions:
Directions:
Cream shortening, add sugars, then eggs and mix well. Add coconut. Sift dry ingredients and add to first mixture. Add vanilla and Wheaties. Shape with fork and bake on ungreased cookie sheets. For 12 minutes @ 400º.

This was the only cookie that Grandma Hofstra ever baked. She didn't have to do much baking because Grandpa Hofstra was Hofstra's Bakery and it's pretty hard to beat a Hofstra's Santa Claus cookie or Coconut cookie or Chicago Girl cookie. Just a few of Grandpa's specialties.Not to mention Hofstra's Raisin bread or Banket or even Holland Rye bread was so yummy!!
