1 lb of bacon, cooked and diced
1 loaf (1 lb) frozen bread dough, thawed (I use 24 frozen white dinner roll dough instead)
2 Tbsp olive or vegetable oil, divided
1 c. (4 oz) shredded mozzarella cheese
1 envelope (1 oz) ranch salad dressing mix

Directions:

In a skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels. Roll out thawed dough to 1/2 inch thickness, brush with 1 tbsp of oil. Cut into 1 inch pieces; place in large bowl. (If you use the 24 frozen white dinner roll dough, just cut each roll into 2-4 pieces and place in large bowl and cover with the oil - you can skip the part of rolling out the dough). Add the bacon, cheese, dressing mix and remaining oil; toss to coat. Arrange pieces on a greased cookie sheet, laying as needed to form a loaf. Cover and let rise in a warm place for 30 minutes or until doubled. Bake at 350º for 15 minutes. Cover with foil; bake 5-10 minutes longer or until golden brown. Makes 1 loaf.
