Squash Zucchini Sweet Onion Asparagus Red Pepper Green Pepper Mushrooms Any other Vegetables you like 1/4 cup olive oil 1 T fresh garlic (minced) 1 T oregano 1 T Parmesan cheese
Preheat oven to 450º. Spray cookie sheet with Pam. Cut vegetables in large chunks. Place vegetables to cover cookie sheet. Drizzle with olive oil. Sprinkle with garlic and oregano, then Parmesan cheese. Toss vegetables. Bake for 30 minutes.
