Pie Filling:

1 can (14-oz.) sweetened condensed milk
4 egg yolks
4 oz. Key lime juice
1 (9") Graham cracker pie crust (recipe below):
1 1/4 c. Graham cracker crumbs
2 T. sugar
1/3 c. butter, melted

Graham Cracker Crust:

Heat oven to 375º. Prepare crust: In a mixing bowl combine graham cracker crumbs and 2 T. sugar; stir in melted butter until blended. Press mixture firmly and evenly over bottom and sides of a 9" pie plate, bake 10 min. until browned. Cool completely.

Pie Filling:

In a mixing bowl on low speed: blend condensed milk and egg yolks. Slowly, add key lime juice. After all ingredients are mixed together well, pour ingredients into the cooled pie crust. Bake at 350º for 15 min. Chill and serve. Optional garnish of whipped cream is a delicious addition.

This is easy as pie, for all the Hollensheads who love to eat! Friends will think it took you a lot of time to make, and that you are a 5***** pastry chef. YUM!
