1 c luke warm, seasoned, mashed potatoes
1 1/2 c warm water
1 pkg dry yeast
2/3 c sugar
1 1/2 tsp salt
2/3 c shortening
2 eggs
7-71/2 c sifted flour

Directions:
Directions:
In mixing bowl, dissolve yeast in warm water. Stir in sugar, salt, shortening, eggs and potatoes. Mix in flour with hands until dough is easy to handle. Knead on lightly floured surface until smooth and elastic.
Place greased side up in greased bowl and cover with damp cloth and place in frig. Punch down occasionally as dough rises.

Shape dough into 2 inch balls and place in pan. Cover and let rise until double in size. (about 1 1/2-2 hours).

Bake in 400º oven about 12 minutes. Yields about 4 dozen rolls.
